Happy Chestnut Day!

Every year my family really does roast chestnuts like the famous Christmas song...most of the nuts end up in a traditional wine-soaked stuffing recipe from days gone by. For some reason I'm not a stuffingloving person so I groove on using chestnuts in sweeter treats instead. Liane's chestnut cream-covered cake is a yumfully wonderful choice! The cornmeal and teff is a flavorful combination and the chestnut cream is lickably delish...so good on hearty bread or chocolate cupcakes or drizzled on roasted parsnips! Liane's recipes include chestnut flourpowered waffles, beignets and a luscious custard cake too!  :)

Happy National Cashew Day!

Shira believes that through simple soulful saving you can live with less and give more...she even started a nonprofit called Not So Fast to teach everyone how to help! She also organizes community foodsharing programs, leads cooking classes and quietly inspires everyone she meets to make the world a better healthier happier place.  :)

And she makes a crazyawesome cashew loaf! This nutty chunker is fabulicious sliced and sandwiched or serve it sauced for a potluck or family feast! The cheezy sauce is fast and easy, or go for the roasted recipe that follows for a smokier approach...so good on sliders and fries! And enjoy a few more of her yumful uses for cashews...  :)

Happy National Nut Roast Day!

Blogger of the Day: Johanna at Green Gourmet Giraffe

Officially it's National Nut Day but since each lucky nut gets its own individual holiday, I'm dubbing it National Nut Roast Day...which gives me the pleasure of featuring Green Gourmet Giraffe!

I'm a relative newcomer to Johanna's blog so I'm still exploring her treasure trove of yumful recipes but one love I discovered we share is nut roasts! Not only has she developed dozens of delicious nut roasts, but she also features "A Neb at Nut Roast"* posts where you can learn of, share and discuss the wonders of this marvelous meal...what binders to use, which veggies pair well, how to sauce and sandwich up the leftovers if you have any! Give me a chunk of nut roast layered between two thick slabs of bread, bedded with veggies and dripping with sauce and I'm bouncing in roasty rapture...yumza!  :)

Beyond the roasts there's so much more...Johanna shares colorful notes and narratives on cooking, plus glimpses of her kitchen and garden in Melbourne and tales of her global gallivanting. She also provides plenty of advice and insights into ingredients, techniques and tools, as well as wit and wisdom on the joys and jangles of life. Johanna's recipes are easygoing, enticing and inspiring, and so is her writing...like wandering over to your favorite neighbor's house and joining in a casual chat on the porch on a lazy afternoon. Friendly peeps, lots of laughs and a side of music too...before you know it, many hours have pleasantly passed and it's almost past sundown! Time to hop up, run home and try one of Johanna's many irresistible dishes!  :)

Use a Cooking Conversion Calculator to convert oven temps, measurements, etc.
*According to Johanna, "Neb is Scottish slang for having a peek, taking a look, a sticky beak. It literally means ‘nose’."

Happy National Pecan Cookie Day!

Betsy is vividly living proof that a raw plantbased diet can be thrivingly healthy! She's welltrained in nutrition and fitness, including years of study under such culinary luminaries as Alissa Cohen. Betsy teaches her own classes too so if you're lucky enough to catch one, dive right in to the raw lifestyle!  :)

I promised my little nephew we'd make cookies for the football game today so it's Betsy's easy Pecan Pie Cookies for the win!  :)
