Happy Acorn Squash Day!

Summer gently folds into fall, and out roll the schoolbooks, sweaters, sweatshirts and an autumnal array of squashes. Winter squash comes in many shapes, sizes, colors and characters...the skin is usually inedible but the seeds are yumfully toastable! Acorn squash is especially easy to make and goes well with all sorts of grains like superhealthy quinoa. Antonia uses black quinoa but you can use any color, or really any grain you like. She keeps things elegantly simple to focus on bright and brilliant flavors so dish it up and enjoy!  :)

Happy National Zucchini Day!

It's easy to find fresh zucchini at this time of year...check your local farmers' market for the best selection of these slender summer squashes, and if you're lucky, squash blossoms. Did you know that zucchini flowers are edible?  :)
