Happy National Rocky Road Day!

Rocky Road rolls out in many irresistible makes and models...ice cream, cookies, cakes, smoothies. Chocolate, marshmallows and nuts just need to be eaten together! Baking creatives Caitlin and Riley have combined them into these crazyamazing bars, rainbow sprinkled too! Their bars and cakes are their strengths and this triple combo is definitely a winner!  :)

Corinne has a boatload of credentials...back up people, here's just a few: RD (Registered Dietician), LDN (Licensed Dietician/Nutritionist), Psych BA, accomplished author and consultant, and Certified Trainer via Fuhrman’s Nutritional Education Institute with a specialty in vegetarian and vegan health. The short version is this girl knows nutrition inside and out and applies all that wholesome wisdom when she whips up her simple deliciousness. Easygoing entrees, desserts and snackable foods especially fitting if you're on a budget...all perfect if you're trying to live a healthy, practical and thriving vegan life!

Molasses is especially popular among vegans because it's a convenient source of calcium and iron, plus it's easy to swap it in as an earthy sweetener in any hearty recipe. It's pure heaven baked up in cookies, breads and bars, like Corinne's yumfully chunky Molasses Bars!  :)

Happy National Granola Bar Day!

Groovy granola bars make an easy backpack snack, fast grab if you're too busy for breakfast and perfect backup stash if you're going to a new restaurant or family dinner that may not be vegan-friendly. Peace Patch Fact...back in my early inexperienced wandering days, I survived a week in a fabulous but remote youth hostel on a big bag of granola and a can of hot chocolate. That granola was this very hungry vegan's best friend!

Yum-Mo-lisciousness

February 8th is Molasses Bar Day! And it turns out this sticky sweet staple can actually be good for you! Look for the blackstrap variety, preferably organic and Fair Trade.  :)
After yesterday's Giant Snow Dumpapalooza, today is a perfect day to make this get-up-and-go treat!

I'm not a fan of dried cherries or cranberries and since you can add or sub what you want, I'd sub in dried blueberries and chopped dried figs...maybe add chia seeds too!
