Happy Rice Ball Day!

Rice balls are yumfully delicious no matter where you are in the world! In Italy they are traditionally made with arborio or carnaroli rice, stuffed with meat and deepfried. Mexican, South American and Caribbean versions may be filled with spicy pepper and cheese mixes. Asian countries favor glutinous rice or rice flour balls hiding a sweet or savory paste, sometimes whimsically colored and flavored. Often they will be tied to holidays like today's Dongzhi Festival, when Tang Yuan are shared to celebrate the Winter Solstice. Tang Yuan are so hard to resist...one minute your bowl is overflowing, then *poof!* they've disappeared! Don't worry...once you learn the basics, you can whip more up anytime, but get to know your rice before you start rolling!  :)
• Glutinous rice is a very sticky, short-grain rice that is often used in Asian dishes.
• Glutinous rice is also known as sticky rice, sushi rice, sweet rice, waxy rice, mochi rice or pearl rice.
• One cup dried rice yields two cups cooked rice.
• Despite its name, this rice isn't sweet and it doesn't contain gluten.
• White or black varieties work best...brown short-grain rice isn't as sticky.

Happy Bell Pepper Day and Wild Rice Week!

Best things about bells:
• They're colorful...you'll find them in a bold rainbow of colors from green to red and even purple!
• They're plentiful...which means they're cheap, especially if you grow your own.
• They're flavorful...greens are mild, yellows, oranges and reds are sweeter.
• They're healthful...jampacked with vitamin C, plus loads of A and B6!
• They're stuffable!  :)

Wild rice FYI:
• True wild rice is considered a sacred gift by tribal cultures in North America.
• It's pure, natural, unmodified and harvested by hand in the upper midwest according to strict standards that preserve the environment and the tradition.
• It's a fascinating process that honors the earth and your good health too!  :)
• Rich in nutty flavor, it makes yumful stuffing!  :)

April is a treehugger, a writer, an illustrator and an animalsaving vegan. If you leave her alone with an empty pepper, you'll get a crazydelicious veghealthy dinner!  ;)

Happy National Rice Pudding Day!

Blogger of the Day: Pearl at Crunch and Chew

Pearl's recipe menu includes yumful things like Creamy Avocado ‘Carbonara’ and Saucy Sweet Chilli and Soy Sauce Tofu but mostly it's full of sweet easy treats. Go sophisticated with Earl Grey, Orange and Currant Scone for One or go technicolorcrazy with Rainbow Magic Cupcakes. Today I'm feeling extralazy so I'm all for feasting on breakfast foods all day like Pearl's rice pudding. It's superdelish and filling, and you can flavor it up any way you want....spicy or sugary or savory, with fruit or chocolate chips or whatever spins your spurs!  ;)

Happy National Spanish Paella Day!

Paella is an exuberantly colorful and flavorful dish arising from the spinningly gorgeous Valencia region of Spain on the Mediterranean coast. Often a part of community celebrations and food-driven festivals, it is traditionally prepared with all sorts of local fare including little innocent snails and shrimp. Emily kindly replaces these snatched-from-the-sea beings with ground sea vegetables to achieve that briny vibe...so smart! She grinds her own but you can buy an easy seasoning mix like seaweed gomasio, or you can use any flavored salt you wish  (or just skip it). She also serves her Spicy Paella Soup with Lemon Saffron Rice (recipe provided at the link) but you can serve it with any type of rice that you like.  :)

Emily is a Holistic Nutritionist/Brilliant Designer by trade...her blog is just dripping with going-to-make-you-hungry vegan lusciousness. She shows off fabulous photos, step-by-step instructions and helpful healthy info. And a true love for Spain, so she has not one but two versions of Paella!  :)
