Joni really likes writing cookbooks and that's making millions of vegans very happy! In my stack of most used and bookmarked and dogeared and doodled-in cookbooks, I've got at least three of Joni's books...500 Vegan Recipes, Best Veggie Burgers (of course!) and Vegan Food Gifts which has gotten a lot of use in the past few weeks. Going Vegan is getting gifted to a few of my not-yet-vegan family members...Joni and her superdelicious sandwiches and tacos and cakes, cakes and more cakes will convince them to cross to the vegan side!  ;)

I try every year not to buy vegan nog because I always end up drinking the whole dang carton in a day or two...at least if I use it in baking I can slow my intake. That's my theory anyway.  ;)

Happy Vegan Omelette Day!

Nobody on the planet needs to eat eggs, especially when we've got so many egg switches, subs and simulants, and recipes like easy and cheezy tofu scrambles everywhere. Newcastle native Chelsey steps it up with her heavenly omelette and yes, animalfriendly deviled eggs! We've got several LaV favorites...my nephew is a chompmonster for Chelsey's Chocolate Cookie Sandwiches and I am forever grateful for her Cheesy Pepper Arancini...yumza!  :)

Meet Lizz Delicious, an Austin vegan exploring and expanding the wonderful world of compassionate cuisine! She and her partner Christine and sweet little Rusty are currently touring the Southwest, getting their marriage license (congrats!) and scoping out the landscape. When she's not on the road, Lizz creates all sorts of flavorfully filling dishes like her fabulous frittata!

It's National Egg Day so save some chicks and make Lizz's frittata instead! Frittatas are quick and healthy and you can throw in any veggies you like, plus a panful is yumful enough to feed a bunch of hungry friends. Or just you, all day long.  ;)

Deviled eggs are a crazy mess of all the things that made me want to go vegan. The only good things about them are they're easy to eat and kinda salty, so here are some vegan versions that will rock that easy salty crave.  ;)

The secret is in the salt...
You can use regular salt in your egg recipes or amp up the eggy taste with Black Salt (also known as Kala Namak). You can buy it online or in Indian food stores or spice stores. It smells and tastes like real eggs, so use it if you miss that or you are trying to impress non-vegans with your clever vegan cuisine.  ;)
