Happy National Lasagna Day!

Blogger of the Day: Janet at the taste space
Pubs: A Vegan Dinner Party

I clearly remember the first day I rode a bike. My dad had been teaching me for weeks, but I kept wobbling like a drunken clown on a greased tightrope. Then one summer evening came along that sent our family backyard party scurrying inside because of a sudden downpour. The food was hauled in, the kids descended to the basement for ping pong and monopoly, and the adults stirred cocktails and gossiped and noshed on leftovers. I wandered out to the garage, empty at the time, and decided to practice riding my bike solo. Back and forth, round and round, I wobbledstopped, wobbledstopped, wobbledstopped until one supercalifragilistic moment when I rode across the whole garage. Which I admit isn't exactly the Tour de France...but give me credit for persistence and determination.  ;)

My little golden flyer bike got some serious mileage that summer but nothing like what Janet's bike must get every day. In addition to creating some of the most delicious vegan dishes on the planet, she cycles some serious terrain including the grueling Shiner GASP and the challenging Rideau route with her dad. She definitely glides a happy groove when it comes bikes, balls and all sorts of yum, which brings us to today's food holiday...

Mention lasagna and people get weakkneed and dizzydrooly within seconds! While a bigfatslab of cheezeheavy layers can spin me superhungry, summer calls for a lighter slice. Janet makes it happen with easy zucchini and crazygood cauliflower cheeze. Time to stack it up!  :)

Name your favorite lasagna...how do you like to layer it? Do you remember the first time you rode a bike? Do you still go riding? Describe your favorite ride. :)

Happy Hot Cross Bun Day!

Blogger of the Day: Emily at This Rawsome Vegan Life
Pubs: Rawsome Vegan Baking

Ho hum hot cross buns. Rather staid raisin rolls that primly present themselves at Easter feasts and Sunday brunches everywhere. Not that there's anything wrong with that, but sometimes you just gotta shake things up a bit. Emily's version bumps up this humble bun...no baking required and tinted with cinnamon and spice and raw vegan goodness!

Emily is sweetly spirited and remarkably talented when it comes to crafting raw vegan cuisine. She lives her life and chooses her foods with an emphasis on being healthy, compassionate and kind inside and out. She's an outdoor girl too, into hiking, camping, kayaking and fitness...vigorous activities that need nutrition so her recipes aren't just carrot cubes and lettuce leaves. This girl does raw right and gives you the goods on how to do it too. Her new cookbook is a stunner so check that out after you check out her fabulous frosted buns...  ;)

Are you a fan of the rawsome life? Have you rawified an old standby dish into a surprising new delight? What recipe would you most like to make from heavenly Emily's site?  :)

Happy National Carrot Cake Day!

Blogger of the Day: Amber Shea at Chef Amber Shea
Pubs: Practically Raw, Practically Raw Desserts, The REAL FOOD Cleanse

A few years ago I was searching for a Valentine's Day miracle...a magically deliciously decadent treat that was easy and preferably no-bake because our oven was flaking out (nice timing meanoldoven!). I stumbled across Amber Shea's Caramel-Fudge Brownies which she had entered into the 2011 Hot Raw Chef Competition...hotdiggitydang, that was it! I voted (she won!), then I spun up a quick batch, wrapped them up and yay...they were a hit! I still love this recipe and all her other raw, almost raw and vegan recipes. Her specialty is raw desserts...lovely and stylish and perfect when you need a little package of yum!  :)

Note: Amber Shea has never been 100% vegan...she doesn't believe in labels, but features mostly plant-based cuisine. So far all the recipes I've found on her website are vegan, but check just to make sure and sub in vegan ingredients if needed. She did have a superfun slightly goth vegan wedding...you can check it out here and here if you're looking for ideas!  ;)

Carrot cake with cream cheese is a classic, sometimes with chunks of nuts or raisins, sometimes without. My best friend loves it chunkless but with a thick plastering of vegan cream cheese on top...I'm talking thick-as-a-brick 2-ton topping! Layer it on or leave it off if you're eating light right now. Amber Shea's carrot cake has less than 150 calories a slice (without the icing) and is raw, vegan, gluten-free, grain-free, nut-free, low-fat, with no-added-sugar and no-bake... :P to all those meanoldovens!

Amber Shea cooks up plenty of recipes too like Whole-Grain Rotini with Pecan Cream Sauce, Eat To Live-friendly Pasta Bolognese, Tofu Paneer Tikka Masala, Curried Split Pea-Cauliflower Stew and Roasted Potato Wraps with Black Bean Hummus!

Do you like your carrot cake chunky or chunkless? Cream cheesed or not? Have you ever been to a vegan wedding? What would yours be like?

Happy Nut Milk Day!

Blogger of the Day: Koko at Koko's Kitchen

http://www.herbivoreclothing.com/cow-hugger-light-blue-sticker/
I don't miss cow's milk one bit because I could never be that cruel to cows and because making nut milk is crazyeasy and absolutely addictive! Make it any way you like...blend different nuts, or throw in seeds or spices or protein powders for an extra healthy punch. Once you've got your marvelicious milk, drink it up or use it in any recipe with milk in the mix!  :)

Vancouver-based Koko is a certified baker, pastry artist and raw foods chef on a holistic mission to share her soul-filling feasts with the world! She writes for several vegan-loving blogs, travels the world and studies crystal healing, but mostly she whips up edible gems like these...

Are you a nut milk maker? What's your favorite flavor? Have you ever hugged a cow?  :)
