Happy Summer Apricot Day!

Name a food that's good for your eyes, besides carrots. Try apricots! Bright, sweet and easy to eat, they're supergood for you too! Go organic if you can, including when you buy apricot jam, for an extra boost of wholesome goodness.  :)

For those who don't like the fuzz, peeling apricots is easy...cut an X in the end, dunk in boiling water for a minute, lift them out with a slotted spoon and dunk them in ice water. The skin will peel easily. (It's the same way for peeling peaches and tomatoes.) Pitting them is easy too...slice and twist!
