Mom's box of family recipes includes one each of all the pasta classics...Pasta & Meatballs, Fettuccine Alfredo, Gnocchi, Ravioli, Tortellini and of course Lasagna. The recipes have never varied, soulfully satisfying generations of my Giant Italian Family. That little box is a treasure chest of yumfully steadfast Sicilian tradition. :)
This little treasure chest has a vegan twist...

And there's always lazy lasagna... ;)
Amy's Frozen Gluten Free Dairy Free Vegetable Lasagna I haven't tried it yet...have you?
Whole Foods 365 Frozen Vegan Lasagna The reviews I found weren't so positive. Care to comment?
Any other lazy lasagna you'd like to recommend?
How about restaurant or food truck recommendations? I've seen lots of vegan love for the lasagna at Blossom (NYC), Candle Cafe (NYC), Unity Vegan Kitchen (Austin, TX), The Loaded Bowl (Oklahoma City, OK), Karyn's Cooked (Chicago) and Portobello (Portland, OR).
For me the trick to a perfect lasagna is to get the edges a bit crispycrunchy, but I would never say no to the velvety soft middle pieces. Which do you like better? Does your family have a treasure chest of recipes? What's in it? :)
I love your round-ups of all these gorgeous recipes. Lasagna totally needs that little crispy outside!
ReplyDeleteGetting it perfectly slightly crispified is like reaching lasagna nirvana. ;)
