If you want to play with flavors, use any crispy crumbly cookie that spins your spurs. Switch in a different extract like hazelnut, or liqueur like Frangelico, then garnish as you wish.
If you don't have time for cookie-crumbling you can shortcut by using a pre-made chocolate crust.
