Happy National Pecan Month!

Rika mentioned pecan ice cream the other day and I got all butter pecan-brained so I went in search of a worthy vegan version...and found creamy pecan gold at The Everyday Veggie!  :)

These plantfood groupies groove on superdelicious easy and elegant dishes that don't empty your piggybank. David's the FYI guy, posting nutrition notes like benefitting from healthy fats. Jonathan adds a bit of flair with delights like Fruits of the Forest Chocolate Vegan Cheesecake...yumza! And TEV founder Heather weaves it all together...her beautifully creative cuisine is borne from living in the UK, Canada, Australia and now Panama. She focuses on unusual tastes or fuses familiar ingredients from many countries into inspiring new signature dishes. She makes it look everydayeasy and it really is! :)

Pecans are all sorts of healthy in a shell, packed with protein and fiber and over a dozen vitamins and minerals...perfect excuse to make Heather's yumfully nuthappy treats!  ;)

  1. Mmmm I love pecans!! Always sweetened ;-) Pecan Pie, Pecan ice cream like the one above. Yummmm. Those little mocha pots have me drooling, too!

    1. I know, those mocha pots are irresistible! Your spinach salad with candied pecans is so good...I need to try a version with strawberries and maybe peaches or blueberries...yumza! :)
