Cheese If You Please

Happy National Cheese Pizza Day!
As a kid I had the usual list of won't-eat-it-if-it's-the-last-edible-thing-on-earth foods...liver, brussels sprouts, eggplant, etc. And cheese. I definitely didn't like cheese. Not grilled cheese or cheeseburgers or mac & cheese or any of the exotic and extraordinary cheeses that my parents presented on grand platters for their fancy dinner parties. A Ritz cracker peanut butter sandwich was my idea of a perfect hors d'oeuvre.
Well there were a few exceptions, as long as it was just mozzarella cheese...homemade cheese lasagna, cheese-filled manicotti & ravioli, and fresh-from-the-oven super "pully-pully" mozzarella cheese pizza smothered in mushrooms and sauce. I guess the Sicilian in me has always had a cheese-tooth.  :)
Now that there are so many vegan cheeses and vegan cheese recipes, I can indulge cheesy pizza cravings any time I want...yippee!

    1. Panko-crusted anything makes me weak-kneed with happiness...your cheezy panko-crusted eggplant on toast sounds crazydelicious!
