Happy Garden Pea Day!

Every vegan I know has some kind of bucket list...recipes to try, cookbooks to buy, bloggers to meet, vegan shoes to collect. If you've got a "vegan restaurants to visit" list, Vedge needs to be on it! This Philadelphia restaurant run by chef Rich Landau and pastry chef Kate Jacoby is a pinnacle of plant-based ingenuity. Their dishes are spectacularly creative and fresh and wholly delicious! They rose from the roots of their previous cafe and restaurant Horizons to establish the much-celebrated Vedge, and are currently in the building stages of their newest venture V Street, so put that one on your bucket list too! Now, let's get to our bucket of peas please.  :)

I'm an unabashed fan of the entire pea family from the Sweet Pea to the Snap Pea and especially the Garden Pea in between. By any name, be it Garden Peas, Green Peas, English Peas, Sweet Peas, Baby Peas or even Baby Sweet Peas...I am singin' the praises of these edible emerald jewels! Their vibrant hue and veghearty flavor satisfy my springtime cravings, and their humble simplicity slots right into my timepressed cooking schedule. I'm perfectly happy with a naked bowl of them for a quick snack, or throwing them in with pasta or quinoa, shrooms and a few cashews for a healthy happymeal. The team at Vedge spins them stylishly delicious, as they do with every little glory from the garden!  :)

  1. Eating a meal at Vedge is one of those experiences on my bucket list! Every new menu sounds amazing, and now all the recipes in the book always inspire me. It's just a bit too far for a day trip... But maybe for a special adventure, some day!
