Happy Vanilla Bean Day!

Blogger of the Day: Yvonne at My Eclectic Kitchen
Pubs:
My Eclectic Kitchen Cookbook, Volume 1 (eBook)
My Eclectic Kitchen Cookbook (app)

Yvonne is a professional vegan glutenfree chef with years of training and experience but don't let that scare you...her recipes are simple, healthy, colorful and delicious! She features yumful worldly delights like tahdig, latkes, potstickers and pasta, plus plenty of sweeteasy treats and crazyluscious cakes!  :)

Vanilla vitals...
• The French and their taste for pastries are responsible for the global growth of vanillaloving culture.
• Mexico, Madagascar, Tahiti and Indonesia are the major sources for vanilla.
• Growing and harvesting vanilla beans is very labor intensive and begins with a tropical orchid flower.
Double strength vanilla extract is made with twice as many beans (about 200 beans per gallon) as single strength.
Get real! Pure vanilla extract is made from vanilla beans in an alcohol base. Natural vanilla flavoring uses vanilla beans with little to no alcohol. Imitation vanilla extract contains vanillin, made from guaiacol or from lignin, a byproduct of the wood pulp industry. Imitation vanilla extract may be weaker than pure extract.
Best bean care...Never refrigerate or freeze your beans. Keep them in an airtight container, out of sunlight and away from heat.
• Removing vanilla bean seeds is easy! (quick video)
Vanilla Equivalents: 1 whole Vanilla Bean = 1 tablespoon Pure Vanilla Bean Paste = 1 tablespoon Pure Vanilla Extract = 1 tablespoon Pure Vanilla Powder

Which vanilla bean variety is your favorite? Where do you buy them? Have you ever made your own vanilla extract or syrup? Which would you choose right now...vanilla cake, vanilla pudding or vanilla ice cream?  :)

Happy National Pumpkin Cheesecake Day!

Blogger of the Day: DJ Karma at VegSpinz

One of my most favorite classes at university was Philosophy of Humor...for one whole smiley semester we watched comedies, swapped cartoons and laughed our academic asses off! It was the easiest and most spinningly fun A I ever earned...education shouldn't be all nose-to-the-grindstone, right? If you're lucky enough to attend UC Davis you can enroll in their Experimental College and take crazycool courses like Belly Dancing, Chinese Wrestling and Groove University, run by DJ Karma and her audiophile associates. Learn to spin in school!  :)

DJ Karma is supercreative in the clubs and in the kitchen...always cooking yumful stuff, she kicks up her artistic dishes to challenging new heights! Her Hollywoodstyle Halloweens include spooky tunnels and scary movies, crunchy ghosts and veggie coffins, cupcakes, candy corn and this killer cheesecake pie!  ;)

Today is also International Day of the Nacho...yippee!  :)

Learn about Gators, Crocs, Snakes, Tortoises and more, then Go Skin Free!

Which would you choose...cheesecake or pie? How do you top your nachos? What's the best class you ever took?  :)

One of my best friends has a birthday this week so I'm bringing her a yumful surprise...cheesecake! Lesley's recipe is slambam easy and extraspeedy...just about an hour in the freezer. Go with her Cheezecake Bites if you need an even quicker hit of cheesecake bliss. ;)

When she's not devising delicious eats, Lesley devotes herself to new precious projects, touring the country to research Neapolitan pizza, and helping out in her husband's pizza restaurant il Lazzarone. They serve authentic Neapolitan pizza adhering to strict culinary standards, including a veganfriendly marinara version...yumza!  :)

If you had to choose...strawberry or cherry cheesecake? Raw or baked? Favorite pizza restaurant? What's the best birthday surprise you ever had?  ;)
