Happy National Pumpkin Pie Day and Santa Day!

I really want today to be Cinnamon Toast Day too because it's one of my favorite Santa Day early morning treats...or afternoon snack or midnight munchie. Fast, simple and so squealingly yumful, and the best breakfast when you're a kid, waiting for your parents to wake up so you can open Christmas presents.  ;)  But it's officially Pumpkin Pie Day so here's an easy punkin fix that you can quickly whip up, happily snack on and share with everyone!  :)

Cathy is a plantbased teaching chef writing healthy recipes that anyone can make...she provides clear instructions and suggestions and always answers your questions. She shares loads of vegan love here...food facts, cooking tips, helpful meal plans and supernutritious stuff that's straight up delish!  :)

Sweet treat balls can spin any way...the options are endlessly yumful! Cake balls, snack balls, power balls, energy balls, rolled doughs and doughnut holes...baked, frozen, glazed, frosted, seed covered and rainbow sprinkled all qualify. Make them wholesomely healthy or elegantly decadent...Dynise does a little of both!  :)

Dynise is a whizbang dynamo of energy...she writes, cooks, demos and teaches vegan goodness around the world! She's been loving the plantbased life since her early teens, blogging recipes, recommendations, reviews and rescues on her Philly based website. She collects vegan nail polish (here's a handy list), crochets and sews and creates cool vegan tees too! Plus running, running, running! Her three cookbooks are superhelpful for new vegans...the last one is lusciously pie packed and crazy sweet!

Happy National Trail Mix Day!

Gorp...that's what my dad called it when he taught us how to make trail mix as kids. He said it stood for Grape Nuts, OfCourseChocolate, Raisins, Peanuts and Seeds. (So I guess it was GORPS.) Anyway, that was his recipe. Then we'd hit the hills and hike and a big bag of this munchable snack kept us happy all afternoon. Call it whatever you like...the key is combining sweet, salty and a punch of protein. The classic mix contains raisins, nuts and chocolate but Brittany switches in chickpeas for a superboost of longlasting energy. Stuff this snack in your pocket on the trail, on the road, at a concert or just in a big bowl in the kitchen...it's crazy addictable so double up the recipe!  :)

Happy National Onion Rings Day!

In honor of the Annual Walla Walla Sweet Onion Festival let's whip up some crispy rings! Walla Walla's make fabulous onion rings, but any sweet onion will work.  :)

I've heard zillions of tips for slicing onions without watery eyes...everything from supersharpening your knife first or using a ceramic knife to lighting a candle near your cutting board while you slice. Here's a heap of videos that may help keep you dry-eyed while you slice...
