Purple potato trivia...
• Purple potatoes are superhealthy, full of heart-strong anthocyanin, the same stuff that makes blueberries, blackberries and red grapes yumfully good for you!
• Most grocery stores have them, or look for them at farmer's markets or health food stores. Buy organic if you can!
• Some people use "blue potatoes" and "purple potatoes" to mean the same thing. Across the Atlantic they're often referred to as truffle potatoes.
• Sub them into any potato recipe to crazy it up. Purple sweet potato fries...ohheckyes!  ;)

Have you ever tried purple potatoes? What would you combine them with? Magenta watermelon radishes? Deep green Brussels sprouts? Carrots? Edamame? Pomegranates? Paint me your palette!
